I normally have barbeques where I would buy packet stuff and just stick it onto the barbeque. Today I want to do something tasty to impress my guests, especially impress my wife" "impress your wife OK. Well I have a really good recipe for you, its a turkey burger that's got coriander and lemon in it" "brilliant" "here we've got 500 grams of British turkey mince, this is a really great alternative to using beef or lamb" "OK" "and here what we've got is one onion that's been chopped up and fried to soften it which makes it a bit sweeter, we're going to add in the lemon zest which is really good with turkey. Last but not least is two table spoons of freshly chopped coriander here; once you've got all of that in there we roll our sleeves up, we get stuck in, we always make sure we've washed our hands first, which we have" "OK" "well we're basically going to squidge this all up to get it really evenly distributed" "OK" "OK, lets do it" "so I just stick right in" "yeah just straight in, that's it. check you've got even distribution because if you get all your lemon zest in one burger its quite a zingy burger for one person" "its not going to be nice for the person is it" "we've sort of roughly quartered our mixture, grab a quarter, I tend to squash it together and I pop it down on the chopping board, give it a little squash down on the top, turn it, you probably want a maximum of an inch thickness on these burgers. So the next thing to do is to wash our hands and get these on the barbeque" "are you impressed?" "I'm really impressed" "are you sure they look good?" "they look amazing" "fantastic, thank you very much" "you're the burger maestro" "thank you" "so when the coals are white hot that's when we know the barbeque is ready to put our burgers onto, so what we've got to do is brush them with a little bit of oil and we'll put them on the barbeque for 5-7 minutes each side. Take a ready made salsa, bought that from Sainsbury's" "OK" "and then this is just half a chopped orange pepper, just throw it all in" "is that good?" "yeah really good" "thank you" "and that is just going to sit on top of your burger and just absolutely finish it off perfectly. So Ian we've made the salsa, I can smell those burgers; lets just go and check if they're ready to be flipped. Wow look at that okay you can see that they're cooked halfway through, flip all of them over for another 5-7 minutes over on the other side. So everyone worries about how to know whether a burger is ready or not, best way to do it is to take a knife pop it into the middle of your burger whatever you're actually cooking, make sure that the juices run clear, if they are your fine if not back on the barbeque.
